This Paleo Lemon Garlic Asparagus recipe is light and compliments grilled meats and fish. I like it because it tastes great with a steak or salmon and it takes no effort at all on my part (which is always nice when I’m in a hurry!). Just a side note, I prefer to cook asparagus ONLY when it is in season. If not, it will be stringy and taste sour. I prefer it tender and sweet.
It’s asparagus season! We really love asparagus, but it is one of those vegetables that needs to be in season to really enjoy it, so we’re so happy that its that time of year. Did you know that asparagus is a flowering plant, low in calories, but high in antioxidants? It is also a source of folate and potassium, and the green asparagus is high in Vitamin C. Such a great tasting, healthy vegetable!
Paleo Lemon Garlic Asparagus
1 bunch Asparagus
2 Tbsp Olive Oil
2 Garlic cloves
2 tsp Lemon Juice
½ tsp Coarse Sea Salt
½ tsp Black Pepper
pinch ground White Pepper
pinch ground Cayenne
Preheat the oven to 375 degrees Fahrenheit.
Mince the garlic and toss with the asparagus, oil, lemon, cayenne pepper, sea salt and peppers. Spread the asparagus out on a baking sheet or grill pan.
Bake for 15 minutes, uncovered, turning the asparagus once for even cooking.
