Well, it’s raining, again. Sigh. At least we got out to the beach yesterday. We took Chance and a new Frisbee and he was in heaven! I think he’s still tired from it! We also got the spare bed all cat-proofed, so they can no longer hide under there. Ah, feels good. Today, I finished up the garden with some trellises for our tomatoes in hopes that they will grow! I know it’s late in the season, but in Florida, you have more time to play with, as the sun is out all year.
And now for a recipe that has nothing to do with our garden. Hehehe. Classic, simple. Staple. We love the mashed no-tatoes because they’re delicious and wholesome.
Mashed No-Tatoes (Cauliflower)
1 head Cauliflower
¼ cup Almond Milk (unsweetened)
½ Tbsp Walnut Oil
Sea Salt and Pepper (to taste)
Trim the cauliflower, removing the stems. Steam the cauliflower. If I’m lazy, I will just put it in a ziplock bag and leave a 1” opening and microwave for 3-4 minutes. If not, I’ll steam them over medium heat, covered, with ½ cup water until tender.
In a bowl, combine the cauliflower, almond milk, walnut oil, sea salt and pepper to taste. I like to use a hand mixer, but you could use a blender or food processor too. Just blend it to a mash.
Serve along side our Classic Rib Eye Steak and Vegetable Medley or atop our savory Shepard’s Pie!
