Two for the price of one! We’re doing a double post today, so we can get all of the elements of the salad up for you to enjoy! We were actually out eating with the family this past week and had a salad that inspired me to make this one. The dressing is different, but that’s because I don’t really like sweet dressings. So this one is light and fresh and has tones of the summer.
Summer Berry Salad
1 head Romaine Lettuce
1 Chicken Breast
5-6 Strawberries
½ cup Blueberries
¼ cup Toasted Almonds
Lightly dust the chicken with adobo seasoning. Grill (my preference), bake or pan-fry and slice.
Chop the lettuce and toss with sliced grilled chicken, sliced strawberries, blueberries, toasted almonds* and lemon basil salad dressing.
*NOTE: To toast the almonds, heat over medium-high heat in an ungreased pan and stir until golden brown.
