Paleo Sweet Potato Home Fries, A Breakfast Side with Herbs

So I’m super excited because I finally bought an online language course for the next year. I’m so ready to speak Spanish! Angel’s family understands English, but don’t speak much, so I’m excited to eventually be able to communicate. So in honor of my newly found educational expansion, I’ll be offering a word of the day in Spanish.

Today’s word:  la zanahoria (carrot)

This recipe is a favorite in our house. Its easy, fast, gives us energy and tastes great with anything. I recommend the hot sauce because it gives it a great dimensions with the herbs (I use dried herbs). I like my sweet potatoes to be a little al dente, so if you like really squishy potatoes, leave them in for another 3 minutes. Enjoy!

Sweet Potato Home Fries

2 Sweet Potatoes

2 tsp Herbs de Provence

Sea Salt and Pepper (to taste, about 1/4 tsp each)

2 Tbsp Olive Oil

*Optional: 2 tsp Sriracha (Thai Hot Sauce, we love this)

Peel and dice the sweet potatoes into ½” squares. Toss the sweet potatoes with the herbs de provence, sea salt, pepper and sriracha (which is SO good if you haven’t tried it).

Heat the oil in a pan over medium-high heat. Add the sweet potatoes, turn the heat down to medium, cover, and cook for 15 minutes. You’ll want to shake or stir the pan, so the sweet potatoes don’t burn on one side.
