Paleo Sweet Potato Home Fries, A Breakfast Side with Herbs

Our Paleo Sweet Potato Home Fries are oven-roasted and are seasoned with herbs de provence, olive oil, sea salt and black pepper. It’s easy, fast, gives us energy and tastes great with anything. I recommend the hot sauce because it gives it a great dimension with the herbs. I like my sweet potatoes to be a little al dente, so if you like really squishy potatoes, leave them in for another 3 minutes. Enjoy!

Angel’s family understands English, but don’t speak much, so I’m excited to eventually be able to communicate. Recipe: Paleo Sweet Potato Home Fries

Ingredients

  • 2 Sweet Potatoes
  • 2 tsp Herbs de Provence
  • Coarse Sea Salt and Black Pepper (to taste)
  • 2 Tbsp Olive Oil
  • Optional: 2 tsp Sriracha

Instructions

  • Peel and dice the sweet potatoes into ½” squares. Toss the sweet potatoes with the herbs de provence, sea salt, pepper and sriracha (which is SO good if you haven’t tried it).
  • Heat the oil in a pan over medium-high heat. Add the sweet potatoes, turn the heat down to medium, cover, and cook for 15 minutes. You’ll want to shake or stir the pan, so the sweet potatoes don’t burn on one side.
  • This recipe is Vegan!
