Let me start by saying that I think this recipe for Paleo Taco Salad would be really good as a wrap too, but I didn’t have lettuce that I hadn’t already cut, so we made a Paleo Taco Salad out of ours. Either way, I think this recipe is fantastic. Angel cleaned his plate completely, which always makes me feel good :) I’m going to have a hard time following that up tonight!! The flavors are mildly spicy and the grassed beef is tender and lean. You can use our Paleo Jalapeño Salsa or Paleo Red Salsa if you want something a little sweeter.
Paleo Taco Salad
1 lb ground Grass Fed Beef*
1/3 cup Water
Vine Ripe Tomatoes
Optional: Hass Avocado
*This recipe can be made with any protein – shrimp, pork, chicken or white fish work best.
Cook the meat over medium-high heat. When its done (will no longer have any pink color to it), drain the grease and put the meat back on the stove. Then add the water and the spices and mix until the you have reached your desired consistency (more water = juicier meat, more spices = spicier meat. We like 1/3 cup + almost all of the spices from the linked recipe).
Either cut the lettuce into strips or use it as a wrap and layer: meat, tomatoes, salsa. If you are using the optional ingredients, then I would layer lettuce, meat, avocado, tomatoes, salsa and cilantro. Enjoy!
