Paleo Vegetable Stir-fry, A Fragrant Side for Lunch or Dinner

For today, we’re posting several different recipes, which all were eaten for the same dinner. The great thing about getting into the swing of Paleo is that once you get a handle on how to cook differently, then everything becomes just as easy as non-Paleo, This vegetable stir fry takes about 10 minutes total, from chopping to cooking and can all be done while the meat is on the grill! Perfect for busy schedules!

Vegetable Stir-fry

1 Red Bell Pepper

1 Green Bell Pepper

½ Red Onion

1 cup sliced Mushrooms

1 Green Onion

3 Garlic cloves

1 Tbsp Sesame Oil

1 Tbsp Olive Oil

Sea Salt (to taste)

Cut the peppers and onion into 1” cubes. Dice the green onion, mince the garlic, and slice mushrooms.

Heat the oils in a pan over medium-high heat. Add the onions and peppers. Sauté for a minute, then add the remaining ingredients. Cover and reduce the heat to medium-low for about 3 minutes. Uncover and cook until slightly tender. Takes less than 10 minutes total cook time!

Serve along with our Ginger Garlic BBQ Sauce and Boneless Pork Ribs!
