Paleo Savory Sweet Potato Hash Browns, A Hot Breakfast Side

Another busy busy busy week! I didn’t even have time to post yesterday! We had family out for the weekend, which was a blast! I didn’t want to see them go, as we don’t get to see family very often. We went to the Washington Gardens (still in FL), the beach, flew a kite, caught some fish, saw some snakes and watched movies. Even the Easter Bunny came! We had so much fun and excitement that now Angel is sick. Boo!

But now that the fun is over, we’ve got to get back to the grind of everyday work. For today, we’re doing breakfast again…As I don’t write about it often. I used to love hash browns, so we’re gonna do a Paleo take on that!

Savory Sweet Potato Paleo Hash Browns

2-3 large Sweet Potatoes

2 Tbsp Extra Virgin Olive Oil

½ tsp Garlic Powder

½ tsp Parsley Flakes (I used dried)

½ tsp Onion Powder

½ tsp Lemon Pepper

Sea Salt and Pepper (to Taste)

Peel the sweet potatoes and then grate them on a cheese grater. Toss the gratings with the spices, salt and pepper. Heat the oil in a skillet over medium to medium-high heat. Add potatoes. Cook until the sweet potatoes are tender, stirring frequently.

*NOTE: if you want it to be done faster, you can cover the skillet with a lid for a few minutes to steam the potatoes.

This goes great under our Sunny Side Up Eggs or in our Bird’s Nest Breakfast for a quick and delicious meal!
