Well, Angel is out of town for work today and it cold and raining, so I’ve decided that tonight will be dedicated to my March recipes – Paleo Snacks! I’m very excited, as we will be doing a lot of healthy, delicious snacks that are easy and portable. So if you have any suggestions, please let me know and I’ll make sure to come up with a yummy Paleo alternative J
As for today, I’m going to share something very special with you. It’s a recipe for the most absolutely perfect Paleo Sea Scallops in the world. No, I am not pulling your leg – they are flawless. Angel has figured out the meaning of life in these things, I promise you that…which is great and also a little depressing because I used to think I was the seafood master. No mas, that’s for sure! I hope you enjoy these juicy, beautifully browned sea scallops as much as I did!
Paleo Pan-Seared Sea Scallops
10 large Sea Scallops (ours were about 2 inches across)
¼ cup Coconut Water
Coconut Oil Cooking Spray
Sea Salt and Pepper
Let me start by saying that these are easy. Coat a non-stick pan with coconut oil and heat over medium.
Take your scallops and dip them in a water bath (just to rinse them of any gunk) and then set them out on a paper towel and turn (to dry lightly).
Once the oil is heated, just plop your scallops in the pan. Add coconut water (to create a thin layer between the scallop and the pan – this is the most important part!!!) and sprinkle with salt and pepper.
Cover the pan with a partially open lid and let cook for about 4 minutes or until slightly bouncy to the touch (it really depends on the size of your scallops – when you push your finger down on the scallop, it should bounce back a little. Not a lot! A little.)
DO NOT FLIP THE SCALLOPS. This is how they get that nice brown on one side without tasting like a rubber-band.
Once bouncy, take them off the heat, flip them (brown side up) onto your dish and enjoy!
